Fruity blackberry chutney

Packed with blackberries, apples and apricots.

What you need

3 tsp vegetable oil
350 g onions, peeled and chopped
1 clove garlic, peeled and crushed
450 g cooking apples, peeled, cored and chopped
900 g blackberries
225 g ready-to-eat dried apricots, chopped
100 g raisins
600 ml white wine vinegar
100 g soft light brown sugar
1 tsp salt
1 tsp mustard seeds
1 tsp ground ginger
1/2 tsp dry mustard
seasoning

Method

  1. Wash the blackberries. Drain well.

  2. Heat the oil in a large pan or preserving pan. Add the onions and garlic. Fry for 2-3 min until softened.

  3. Add the apples to the pan. Fry for 2 min. Add remaining ingredients. Bring to the boil and simmer for 15-20 min until pulpy and reduced slightly. Season to taste.

  4. Spoon into sterilised jars. Cover, seal and label. Store in a cool, dark and dry place until required.
