Jamaican fruit and yogurt pie

So easy for entertaining - banana, mango and melon served in a ready-made pastry case.

What you need

175 g greek yogurt
6 tsp orange juice
3 tsp icing sugar
1 sweet pastry case 20cm
1 banana, peeled and sliced
6 tsp lemon juice
1 small mango, stone removed, peeled and chopped
2 watermelons, skin removed and chopped

Method

  1. In a bowl, mix together the yogurt, orange juice and sugar until well mixed. Spoon into the pastry case.

  2. Toss the banana in the lemon juice to prevent discoloration. Arrange in the pastry case with the mango and melon.

  3. Chill for 20 min. Serve in slices.
