Savoury muffins

Good on their own or served with your favourite savoury spread.

What you need

3 tsp olive oil
175 g mushrooms, wiped and chopped
1/2 tsp ground nutmeg
3 tsp fresh thyme, chopped
225 g plain flour
1/2 tsp baking powder
1 large egg, beaten
150 ml milk
45 ml natural yogurt
seasoning

Method

  1. Preheat oven to 200°C. Lightly grease and flour a 12-hole muffin tin

  2. Heat the oil in a frying pan. Add the mushrooms and nutmeg. Fry over a high heat for 3-4 min, stirring frequently to evaporate any excess liquid from the mushrooms. Stir in the thyme. Set aside and leave to cool slightly.

  3. Meanwhile, in a large bowl, sift together the flour and baking powder with a generous pinch of salt. In a jug mix together the egg, milk, yogurt and seasoning. Stir in the cooled mushrooms.

  4. Pour the egg mixture into the flour mixture and mix together very quickly. Divide the mixture between the muffin tin, filling each well three quarters full only.

  5. Place in the oven for 15-20 min or until golden brown, firm and well risen. Remove from oven, leave to cool for 2 min.

  6. Turn out and serve while still warm.

Cook's tip

Do not over mix the muffin mixture as this will result in coarse and chewy textured muffins. Also, do not smooth over their surface before cooking so you are sure to get a nice rough texture to them.
