Easy vegetable and red kidney bean stew

A simple, colourful dish, popular with children as well as adults. A Rose Elliot recipe.

What you need

1 large onion, sliced
1 large red pepper, de-seeded and chopped
2 carrots, scraped and diced
2 leeks or courgette, sliced
2 sticks celery, sliced
3 tsp olive oil
175 g mushrooms, washed and sliced
4 tomatoes, skinned and quartered
425 g canned red kidney beans, rinsed and drained
seasoning
1/2 tsp paprika

Method

  1. Heat the oil in a large saucepan. Add the onion, pepper, carrots, leeks or courgettes and celery.

  2. Cook gently for 10 minutes, covered. Add remaining ingredients and seasoning to taste.

  3. Continue to cook, covered, for 10-15 minutes. Check seasoning and serve.
