Feta and strawberry salad

You could use Lancashire or Caerphilly cheese instead of feta.

What you need

For the dressing
100 g fresh strawberries, hulled and chopped
90 ml olive oil
1 tsp balsamic vinegar
seasoning
For the salad
200 g mixed lettuce leaves
1 bunch watercress, trimmed and rinsed
1 head chicory, trimmed and separated into leaves
2 little gem lettuces, trimmed and separated into leaves
225 g fresh strawberries, hulled and sliced
1/4 cucumber, sliced
275 g feta cheese, diced or crumbled

Method

  1. For the dressing, put the strawberries in a food processor with the olive oil, vinegar and seasoning to taste. Process until smooth. Pour into a serving jug. Chill.

  2. In a large salad bowl, toss together all salad ingredients.

  3. Just before serving pour over the dressing.
