Feta and strawberry salad
You could use Lancashire or Caerphilly cheese instead of feta.
What you need
- For the dressing
- 100 g fresh strawberries, hulled and chopped
- 90 ml olive oil
- 1 tsp balsamic vinegar
- seasoning
- For the salad
- 200 g mixed lettuce leaves
- 1 bunch watercress, trimmed and rinsed
- 1 head chicory, trimmed and separated into leaves
- 2 little gem lettuces, trimmed and separated into leaves
- 225 g fresh strawberries, hulled and sliced
- 1/4 cucumber, sliced
- 275 g feta cheese, diced or crumbled
Method
For the dressing, put the strawberries in a food processor with the olive oil, vinegar and seasoning to taste. Process until smooth. Pour into a serving jug. Chill.
In a large salad bowl, toss together all salad ingredients.
Just before serving pour over the dressing.
