Pecan and cherry cookies

Tasty little cookies that are good for the lunchbox, a picnic or afternoon tea.

What you need

75 g butter
50 g caster sugar
100 g self-raising flour
40 g chopped pecans
40 g glace cherries, chopped
For the topping
18 pecan halves

Method

  1. Preheat oven to 160°C.

  2. Cream the butter (or margarine) and sugar until soft and light. Add the flour, then the pecan nuts and cherries.

  3. Knead thoroughly and roll into balls. Place on lightly greased baking trays allowing plenty of room for the mixture to spread.

  4. Press the pecan halves into the centre of each cookie.

  5. Bake in the oven for 15 min. Allow to cool on the baking sheets until cold. Store in an airtight container.
