French style peas

Peas tend to be very under-rated as a vegetable accompaniment, but once you've tried this dish I'm sure you will think again.

What you need

25 g butter
4 salad onions, trimmed and sliced
1 clove garlic, peeled and crushed
350 g frozen peas, thawed
1/2 head small cos lettuce, shredded
seasoning

Method

  1. Melt the butter in a large pan. Add the salad onions and garlic and fry for 2 min or until softened.

  2. Add the peas and 30 ml water to the pan. Cover and cook for 2 min.

  3. Stir in the lettuce and seasoning and cook for 1 min. Serve immediately in a warmed serving dish.
