Middle eastern chicken with pine nuts and apricots

Strips of chicken are cooked with cinnamon-scented rice, apricots, pistachios and pine nuts in this fragrant meal.

What you need

450 g long grain rice
6 tsp sunflower oil
1 onion, peeled and finely chopped
4 salad onions, trimmed and thinly sliced diagonally
75 g ready-to-eat dried apricots, chopped
50 g shelled pistachio nuts
100 g pine nuts, toasted
6 tsp ground cinnamon
4 skinless boneless chicken breasts, cut into strips
1 tsp rose water
seasoning

Method

  1. Cook the rice in boiling salted water for 10-15 min until just tender.

  2. Heat half the oil in a frying pan. Add the onion and fry for about 2 min until just softened. Remove with a slotted spoon and set aside. Add a little more oil to the pan. Fry the pine nuts, pistachio nuts and apricots and 1/4 of the cinnamon until lightly browned. Remove from the pan and mix with the onion.

  3. Add the remaining oil to the pan. Stir fry the chicken strips, sprinkling on the remaining cinnamon as they cook. Be careful not to overcook the chicken so it remains tender and juicy.

  4. Add the rice and onion mixture to the pan. Heat through. Season to taste. Pile in a large shallow dish and sprinkle over the rose water.
