Lemon tart
Tangy lemon tart made from fromage frais and lemons.
What you need
- 225 g ready made shortcrust pastry
- For the filling
- 5 medium eggs, beaten
- 150 g caster sugar
- finely grated rind and juice of 5 lemons
- 1 tsp cornflour
- 175 g natural fromage frais
- 2 tsp icing sugar, sifted
Method
Preheat oven to 200°C.
Roll out the pastry on a lightly floured surface and use to line a 20 cm round deep-sided flan tin, trimming off any excess pastry.
Bake blind for 10 min before removing the baking beans. Return the pastry case to the oven and cook for 5 min or until the pastry is crisp.
Beat all the filling ingredients together until well mixed. Carefully pour into the pastry case. Reduce oven temperature to 190°C. Return the filled pastry case to the oven and cook for about 30 min until just set firm.
Remove tart from the oven. Leave to cool completely.
Sift a little icing sugar over the tart. Chill well and serve in slices.
