Lemon tart

Tangy lemon tart made from fromage frais and lemons.

What you need

225 g ready made shortcrust pastry
For the filling
5 medium eggs, beaten
150 g caster sugar
finely grated rind and juice of 5 lemons
1 tsp cornflour
175 g natural fromage frais
2 tsp icing sugar, sifted

Method

  1. Preheat oven to 200°C.

  2. Roll out the pastry on a lightly floured surface and use to line a 20 cm round deep-sided flan tin, trimming off any excess pastry.

  3. Bake blind for 10 min before removing the baking beans. Return the pastry case to the oven and cook for 5 min or until the pastry is crisp.

  4. Beat all the filling ingredients together until well mixed. Carefully pour into the pastry case. Reduce oven temperature to 190°C. Return the filled pastry case to the oven and cook for about 30 min until just set firm.

  5. Remove tart from the oven. Leave to cool completely.

  6. Sift a little icing sugar over the tart. Chill well and serve in slices.
