Raspberry cordial
Just two ingredients: frozen raspberries and sugar.
What you need
- 900 g frozen raspberries
- 450 g granulated sugar
Method
Place the raspberries in a large saucepan. Add the sugar. Heat gently for 8-10 min until sugar has dissolved. Remove from heat.
Crush the raspberries with a fork. Strain the mixture through a muslin-lined sieve overnight.
Pour into a clean dry bottle. Seal, label and store in the fridge for up to 1 week.
Serving suggestion
Simply mix 1 measure of the cordial to 5 measures iced water. Serve in glasses with plenty of ice.
