Raspberry cordial

Just two ingredients: frozen raspberries and sugar.

What you need

900 g frozen raspberries
450 g granulated sugar

Method

  1. Place the raspberries in a large saucepan. Add the sugar. Heat gently for 8-10 min until sugar has dissolved. Remove from heat.

  2. Crush the raspberries with a fork. Strain the mixture through a muslin-lined sieve overnight.

  3. Pour into a clean dry bottle. Seal, label and store in the fridge for up to 1 week.
