Stewed beans and sweet potatoes

This is a South African favourite although it generally includes potato as well as sweet potato.

What you need

350 g sweet potatoes, peeled and diced
300 ml rich beef stock
1 fresh bay leaf
100 g green beans, trimmed and cut into 2 1/2 cm lengths
200 g frozen broad beans or canned broad beans, drained
50 g butter
1 pinch freshly grated nutmeg
seasoning

Method

  1. Place the sweet potato in a heavy based saucepan. Add the stock and bay leaf. Bring to the boil and simmer gently for 5-8 min.

  2. Add the green and broad beans and simmer for 5 min or until just tender.

  3. Drain thoroughly. Toss in the butter, nutmeg and seasoning. Remove bay leaf and serve.

Serving suggestion

Cook's tip

Once the sweet potato has been peeled and diced, leave to stand in a bowl of cold water with the freshly squeezed juice of 1 lemon to prevent discolouration. Drain thoroughly and use as in recipe.
