Cheese in a pot - microwave

A brilliant way to use dry, leftover cheese! Serve with Melba toast. An alternative to a cheese board after a meal.

What you need

25 g butter
6 tsp-45 ml brandy
100-175 g cheddar cheese or other dry cheese
1 pinch ground nutmeg
1 pinch mace
1 pinch paprika
freshly ground black pepper
50-75 g stilton cheese

Method

  1. Heat the butter and brandy, port or wine for 1-2 min on 100% FULL power. Stir well. Heat again until hot for about 1 min on 100% FULL power.

  2. Add the Cheddar cheese and spices and seasoning to taste. Mix together until well blended. It may be necessary to heat again for 15-30 seconds at a time or on 100% FULL power until the cheese is softened. Be careful not to overheat, otherwise the mixture may separate.

  3. Crumble in the Stilton or blue cheese and blend well. If preferred, the mixture may be blended in a liquidiser or food processor for a smoother texture.

  4. If the mixture seems a little dry, add more butter or liquor until a smooth paste is made.

  5. Pack into small pots or ramekins. Chill before serving.

Add one or more to add to the taste: anchovy essence, Tabasco sauce, crushed garlic, parsley, chives, salad onions, dill, cumin, fennel seeds, caraway seeds, chopped nuts.
