Indian style new potatoes
New potatoes in a spicy yogurt dressing. Serve warm or cold.
What you need
- 350 g new potatoes, well scrubbed
- 300 ml natural yogurt, drained
- 1 tsp curry paste
- 1/4 tsp crushed dried chilli
- 2 sun-dried tomatoes, drained and chopped
- 3 tsp fresh coriander, coarsely chopped
- seasoning
Method
Cook the potatoes in a pan of boiling salted water and simmer for 12-15 min or until just tender.
In a bowl, mix together the yogurt, curry paste, chillies, tomatoes and coriander. Season to taste.
When the potato is cooked, drain well and return to the pan.
Pour in yogurt mixture and mix evenly into the potato.
Serve warm or cold.
Serving suggestion
Garnish with sprigs of fresh basil and serve with lettuce and crusty granary French bread.
