Cheesy marmite fingers

A tasty party piece.

What you need

150 g plain flour
seasoning
1 pinch cayenne pepper
150 g butter
150 g red leicester cheese, finely grated
1 medium egg
1 medium egg yolk
2 tsp marmite or yeast extract
To top
1 beaten egg to brush
25 g red leicester cheese, finely grated

Method

  1. Sift the flour into a bowl with the seasoning and cayenne pepper. Rub in the butter until the mixture resembles fine breadcrumbs.

  2. Stir in the cheese. Beat the egg, egg yolk and marmite together. Gradually add to the 'breadcrumb' mixture but just enough to make it into a soft and pliable, but not sticky dough.

  3. Turn out onto a lightly floured work surface and knead lightly. Cover and chill for 30 min.

  4. Preheat oven to 200°C.

  5. Roll out the dough until about 1/2 cm thick. Cut into 1/2cm strips each, approximately 13cm in length.

  6. Lightly roll each strip to form a thin sausage shape. Twist two strips together to form a twirl, pressing the ends together to seal.

  7. Place the cheesy twirls on baking trays lined with greaseproof paper. Brush each with the beaten egg and sprinkle over the remaining cheese.

  8. Cook in the oven for 10 min, or until golden brown and firm to the touch.

  9. Leave to cool slightly on the baking tray before transferring to a cooling rack to cool completely. Store in an airtight container until required.
