Chicken chasseur

A French recipe for a country chicken casserole.

What you need

1 1/2 kg chicken portions
seasoning
50 g butter
20 g shallots, peeled and finely chopped
100 g button mushrooms, whipped and sliced
45 ml dry white wine
300 ml ready-made brown sauce
100 g tomatoes, skinned and chopped
To garnish
7 g chopped fresh tarragon

Method

  1. Preheat oven to 180°C.

  2. Season the chicken. Heat the butter in a large saucepan. Add the chicken pieces and cook for 8-10 min until golden brown, turning frequently. Brown thighs and legs for longer than breast.

  3. Remove chicken from the pan. Place in an ovenproof dish and cook in the oven for 1 hour.

  4. Meanwhile, add shallots to the hot pan. Cook gently without colouring for 1-2 min. Add sliced mushrooms and cook for 2 min.

  5. Drain off the fat from pan. Add white wine and reduce mixture by half. Add the brown sauce and diced tomato flesh. Simmer for 5 min. Season to taste.

  6. Pour sauce over the cooked chicken pieces. Sprinkle the chopped tarragon over the casserole and serve.
