Cheese and bacon topped tortillas
This is great to cook up as an impromptu feast for friends!
What you need
- 3 tsp vegetable oil
- 1 small onion, peeled and sliced
- 8 rashers rindless back bacon
- 200 g tortilla chips
- 4 sticks celery, trimmed and sliced
- 175 g mature cheddar cheese, grated
- 1 red chilli, sliced, optional
Method
Preheat grill to medium.
Heat the oil in a pan. Add the onion slices and saute for 2-3 min or until softened.
Place the bacon under the grill and cook for 3-5 min. Using a pair of scissors, cut the cooked bacon into strips.
In a heatproof dish, layer the tortilla chips with the onion slices, bacon strips, sliced celery, grated cheese and sliced chilli.
Place under the grill and gently heat through for 5-10 min or until cheese has melted and dish is piping hot.
Serving suggestion
Sprinkle with chopped fresh parsley or coriander.
