Greengage, plum and white chocolate yogurt layer

An easy and delicious dessert.

What you need

225 g greengage plums, stoned and quartered
225 g red plums, stoned and quartered
3-6 tsp caster sugar, to taste
100 g white chocolate, broken into pieces
250 ml greek yogurt

Method

  1. Place the greengages and plums in separate pans with 30 ml water in each and sugar to taste. Bring to a simmer then poach the fruits for 8-10 min until tender. Allow to cool.

  2. Meanwhile, place the chocolate in a bowl over a pan of hot water. Heat through 3-5 min or until melted. Gradually stir in the yogurt to give a smooth cream.

  3. Spoon the poached greengages in the base of stemmed glasses. Cover with 2/3 of the chocolate cream and top with the red plums.

  4. Spoon over the remaining chocolate cream.

Serving suggestion

Decorate with mint leaves and serve with ratafia biscuits.

Cook's tip

If liked flavoured yogurt can be substituted for the Greek yogurt. Rhubarb or raspberry are especially delicious.
