Strawberry freezer jam

A great way to use up over-ripe strawberries - and it's so easy to make.

What you need

450 g very ripe strawberries
450 g sugar with pectin
6 tsp fresh lemon juice

Method

  1. Put the fruit into a non-metallic bowl. Mash gently with a potato masher to crush the fruit. Stir in the sugar and lemon juice.

  2. Leave covered in a warm place for 1-1 days, or until the sugar has dissolved.

  3. Spoon into small plastic containers, or if using straightaway, pretty serving jars or dishes. Seal, cover and label.
