Exotic fruit with ginger and coconut sauce
A fantastic feast of fruit that is cooked on the barbecue.
What you need
- 3 kiwi fruit, peeled and thickly sliced
- 2 papaya peeled halved, de-seeded and sliced
- 2 mangos, peeled stoned and chopped
- 1/2 small pineapple, peeled cored and sliced
- 50 g butter, melted
- For the sauce
- 150 ml freshly squeezed orange juice
- 50 g creamed coconut, chopped
- 3 tsp finely chopped stem ginger
- 6 tsp rum
Method
Place the fruit on the barbecue or under a grill. Brush lightly with the melted butter and cook, turning and brushing with the butter for 5-8 min.
For the sauce, heat up the orange juice in a pan. Add the coconut cream, stirring until dissolved. Add the ginger and rum.
Serve the cooked fruit drizzled with the sauce.
