Exotic fruit with ginger and coconut sauce

A fantastic feast of fruit that is cooked on the barbecue.

What you need

3 kiwi fruit, peeled and thickly sliced
2 papaya peeled halved, de-seeded and sliced
2 mangos, peeled stoned and chopped
1/2 small pineapple, peeled cored and sliced
50 g butter, melted
For the sauce
150 ml freshly squeezed orange juice
50 g creamed coconut, chopped
3 tsp finely chopped stem ginger
6 tsp rum

Method

  1. Place the fruit on the barbecue or under a grill. Brush lightly with the melted butter and cook, turning and brushing with the butter for 5-8 min.

  2. For the sauce, heat up the orange juice in a pan. Add the coconut cream, stirring until dissolved. Add the ginger and rum.

  3. Serve the cooked fruit drizzled with the sauce.
