Chicken and mushroom casserole

A warming casserole that is rich in flavour with bacon, mushrooms, red wine and garlic.

What you need

4 rashers rindless back bacon
4 skinless chicken quarters
50 g flour
seasoning
1 tsp ground nutmeg
6 tsp oil
3-4 cloves garlic, peeled and chopped finely
300 ml red wine
150 ml chicken stock
60 ml fresh parsley, chopped
200 g horse mushrooms
350 g chestnut mushrooms, wiped and halved

Method

  1. Preheat oven to 180°C

  2. Wrap bacon around chicken. Mix nutmeg into seasoned flour. Use to coat chicken.

  3. Heat oil in large pan and cook garlic for 30 sec. Add chicken and any remaining flour and cook for 1 min, turning chicken over once. Stir in wine and stock and bring to boil stirring. Add parsley, then transfer to an ovenproof casserole.

  4. Cook in oven for 35 min.

  5. Stir in mushrooms and return to oven for further 15 min. Remove from oven and serve.
