Welsh cakes

These traditional little cakes are a speciality of South Wales although are still popular throughout the country. Mainly cooked on a bakestone or griddle, they can also be baked in a heavy pan.

What you need

225 g self-raising flour
1 pinch salt, optional
100 g butter
100 g sugar
100 g currants
1 medium egg
50 ml approx milk
To decorate
2 tsp caster sugar

Method

  1. Preheat and lightly grease a griddle or heavy-based frying pan. To test if the correct heat has been reached, shake on a little flour - if it turns golden in 1 min, and no less a time, it is ready.

  2. Sift the flour and salt together. Rub in the butter or margarine. Stir in the sugar and the currants. Blend with the beaten egg and just enough milk to make a fairly firm rolling consistency.

  3. Roll out the dough until just under 1 1/2 cm thickness. Cut into small rounds, using a 7.5cm round cutter.

  4. Place the cakes on the griddle or pan and cook for 4-5 min, or until golden brown on the bottom. Turn over and cook for the same time on the other side. Lift the cakes on to a wire cooling tray. Dust with sugar.

Cook's tip

You could replace 225g self-raising flour with the same quantity of plain flour and sifting with 2 tsp baking powder.
