Popsticker dumplings
The dumplings are fried on one side then covered with stock and cooked until they literally stick to the pan! - making them crispy on the bottom and soft on top with a delicious juicy filling. Serve with soy sauce and chilli sauce.
What you need
- For the dough
- 150 g plain flour
- 100 ml hot water
- for the stuffing
- 50 g minced pork
- 2 heads chinese leaves, shredded
- 2 1/2 cm root ginger, peeled and finely chopped
- 2 salad onions, trimmed and finely chopped
- 3 tsp dry sherry
- 3 tsp dark soy sauce
- 1 tsp sesame oil
- 1 1/2 tsp caster sugar
- 3 tsp water
- 6 tsp groundnut oil, for frying
- 150 ml chicken stock
Method
Place the flour in a bowl. Gradually mix in the hot water. Knead for 10 min, adding a little more water if the dough seems dry. Cover with a damp cloth. Leave for 30 min.
Meanwhile, mix all the stuffing ingredients together.
Knead the rested dough again for 5 min and divide into portions. Roll into balls.
On a lightly floured surface, roll the balls out to make 6 cm circles. Keep the balls and circles covered with a damp cloth to prevent them from drying out.
Place a small teaspoon of stuffing in the centre of each circle of dough. Moisten the edges with water. Fold each circle in half to make a semi-circle. Piinch the edges together to seal. Using a thumb and forefinger, frill the edges like Cornish pasties.
Heat the oil in a large non-stick frying pan. Fry the dumplings over a low heat until their undersides are crisp and golden.
Pour over the stock. Cover with a tight fitting lid. Simmer for 12-15 min or until all liquid has been absorbed. Remove lid and cook for 2 min. Serve immediately accompanied with soy sauce and chilli sauce.
