Spicy spare ribs

These delicious sticky spare ribs can be easily reheated - and the taste improves if cooked the day before eating.

What you need

12-14 pork spare ribs
1 dash freshly ground black pepper
6 tsp light soy sauce
45 ml tomato ketchup
6 tsp cider vinegar
60 ml orange juice
6 tsp dry sherry
6 tsp soft brown sugar
1 tsp salt
2 cloves garlic, peeled and crushed
2 1/2 cm root ginger, peeled and very finely chopped
1/4 tsp chilli powder

Method

  1. Place ribs in a wide ovenproof dish or roasting tin. Season well with pepper.

  2. Combine remaining ingredients in a bowl. Pour over the ribs, turning them to coat all over. Cover. Leave to marinate for 6-1 days in the fridge.

  3. Preheat oven to 180°C.

  4. Place ribs uncovered, in the oven for 1 hour 30 min, basting them regularly. Increase oven temperature to 220°C. Cook for a further 30 min, turning once, until liquid has almost evaporated and ribs are covered in a glaze.
