Strawberry and champagne granita

A refreshing granita to cleanse the palate in between courses.

What you need

40 ml champagne
50 g caster sugar
juice of 1 lemon
75 g strawberries, hulled and quartered

Method

  1. Heat the champagne with the sugar and lemon juice until it boils.

  2. Immediately remove from the heat, and add the strawberries to the liquid. Cover with greaseproof paper. Leave for 1-2 min or until strawberries begin to soften.

  3. Liquidise the mixture. Spoon into a shallow freezerproof container. Freeze until slushy.

  4. Beat the granita to break down the ice crystals. Freeze until firm.

  5. To serve, scoop the granita into individual glasses.
