Creamy mushroom sauce
This deliciously luxurious sauce is an ideal accompaniment to steaks and is a great alternative to peppercorn sauce.
What you need
- 50 g butter
- 175 g button mushrooms, wiped and sliced
- 25 g plain flour
- 300 ml milk
- 75 g cream cheese, cubed
- seasoning
- 2 tsp fresh lemon juice
Method
Melt half the butter in a pan. Add the mushrooms and fry very gently for 10 min until soft but not coloured. Remove from pan and keep warm.
Melt remaining butter. Stir in the flour and cook for 1-2 min. Gradually stir in the milk, stirring constantly until the mixture boils and thickens.
Remove from heat and whisk in the cream cheese a little at a time until melted and well combined.
Stir in the mushrooms. Season to taste. Stir in the lemon juice. Reheat gently for 1-2 min. Serve immediately.
