Cheats Bearnaise sauce

Very similar to Hollandaise, this sauce has a slightly thicker consistency and richer flavour because the flavourings have been reduced.

What you need

45 ml white wine vinegar
45 ml dry white wine
10 pepper corns, roughly crushed
20 g shallots, peeled and finely chopped
3 tsp chopped fresh tarragon
3 tsp cold water
3 medium egg yolks
seasoning
175 g unsalted butter, melted
3 tsp chopped fresh tarragon

Method

  1. Place the vinegar, wine, peppercorns, shallots and tarragon in a pan. Bring to the boil and boil for 2-3 min or until reduced to 15 ml. Leave to cool slightly and strain.

  2. Put the water, egg yolks and seasoning together in a food processor. Process until thoroughly combined. Then, with the motor still running on a low speed, add the strained liquid mixture and process for 10 seconds.

  3. Slowly add the hot butter in a slow steady steam until sauce thickens and emulsifies. Add the tarragon. Serve immediately.
