Fillets of sole with melon and mint sauce

Use Ogen or Charentais melon for this dish.

What you need

8 fillets sole, skinned
seasoning
6 tsp fresh mint, chopped
300 ml dry french white wine
1 charentais melon or other orange-fleshed melon
150 ml double cream
To garnish
4 sprigs fresh mint

Method

  1. Sprinkle the sole fillets with seasoning and half the chopped mint. Roll up each fish fillet and place in a deep frying pan. Sprinkle over remaining chopped mint and add white wine. Cover and poach gently for about 12 min, until fish is just tender.

  2. Meanwhile, halve and seed melon. Using a parisienne cutter or melon ball cutter, scoop the melon flesh into balls. Scoop out any remaining melon flesh attached to the skin (this is added to the sauce).

  3. Lift out cooked sole fillets and place on a warmed serving dish. Keep warm.

  4. Boil the cooking liquid until reduced, together with remnants of melon flesh. Whisk until smooth. (If the melon flesh is too firm, liquidise the cooking liquid.)

  5. Stir in cream and heat sauce through. Spoon hot sauce evenly over fish. Garnish with prepared melon balls and sprigs of mint.
