Boeuf Bourguignon
An excellent recipe for entertaining.
What you need
- 60 ml oil
- 900 g good quality lean beef braising steak, diced into 5 cm pieces
- 60 ml plain flour
- 450 ml full bodied red wine
- 100 g rindless streaky bacon, chopped
- 2 bay leaves
- 150 g button mushrooms, wiped
- 100 g shallots, peeled
- seasoning
Method
Preheat oven to 150°C.
Heat half the oil in a large frying pan. Fry beef until dark brown on all sides. Remove from pan with a slotted spoon.
Sprinkle the flour into the pan. Cook gently for about 2 min while stirring well so that the flour mixes with the fat and juices into a roux. Stir in the red wine. Add the bacon and bay leaves. Transfer to an ovenproof dish. Add the meat.
Place in the oven to cook for 1 1/1 days.
Heat the remaining oil in a clean frying pan. Gently fry the shallots until golden brown. Stir in the mushrooms and cook for 3 min. Stir the shallots and mushroom mixture into the beef.
Cook for a further 1 - 1 1/1 days and serve.
Serving suggestion
Gratin potatoes, mashed or jacket potatoes.
