Apple tartlets

A very easy dessert that can be prepared ahead when entertaining. Serve with creme fraiche or custard.

What you need

175 g ready made puff pastry, thawed if frozen
4 crisp eating apples, peeled and cored
25 g icing sugar, sifted
25 g unsalted butter

Method

  1. Preheat oven to 220°C.

  2. Roll out pastry. Cut out 13 cm circles (one per serving). Place the pastry rounds onto a dampened baking tray. Prick all over with a fork.

  3. Quarter and slice the apples.

  4. Arrange the fruit on top of the pastry rounds, fanning the fruit out. Dredge with a little icing sugar. Dot evenly with the butter.

  5. Bake in the oven for about 10 min or until well risen and golden brown. Dredge liberally with any remaining icing sugar.

Creme fraiche, cream, fromage frais, ice cream or warm custard

Cook's tip

Add a little ground cinnamon to the icing sugar when dredging. For a caramelised topping, pop the cooked tartlets under a warm grill for 1-2 min.
