Steamed marmalade castles

A store cupboard recipe.

What you need

100 g unsalted butter, at room temperature
100 g caster sugar
2 eggs, beaten
1 egg yolk
225 g white self-raising flour, sifted
60-90 ml marmalade

Method

  1. Lightly grease or butter individual moulds or a 900 ml ovenproof basin. Spoon the marmalade evenly into the bases of the moulds or basin.

  2. Cream the butter and sugar together until pale and fluffy. Beat in the eggs slowly. Fold in the flour with a metal spoon until evenly mixed.

  3. Divide the mixture evenly between the moulds or fill the basin and cover with a piece of pleated foil.

  4. Steam the small puddings for about 40-50 min or the large one for 1 1/1 days or until well risen.

Serving suggestion

Decorate with grated orange rind. Grate a little orange rind into hot custard to serve.

Cook's tip

Freeze the remaining egg white for use later as a glaze or when making meringues.
