Crepe suzette

Practice this recipe so you can cook and flambe this dish in front of your dinner guests.

What you need

for the crepes
2 large eggs
300 ml milk
25 g caster sugar
1 pinch salt
100 g plain flour
6 tsp vegetable oil for frying
for the sauce
75 g butter
75 g caster sugar
finely grated rind and juice of 1 orange
finely grated rind and juice of 1 lemon
5 tsp grand marnier
5 tsp cognac
5 tsp brandy

Method

  1. In a jug, beat the eggs and milk together. Stir in the sugar and salt. Sift the flour into a bowl. Make a well in the centre then whisk in the egg mixture, a little at a time, until all is incorporated and smooth.

  2. Heat a little oil in the base of an 18 cm heavy based frying pan, pouring out any excess. Pour in just enough batter to cover the base and tilt until evenly spread. Cook for 1-2 min or until the underside is golden. Then flip over and continue on the other side.

  3. Stack the cooked pancakes on a serving plate interleaved with greaseproof paper. Keep warm. Repeat with remaining batter to make the rest of the pancakes.

  4. Place the butter in a saucepan and heat gently for 1-2 min or until melted.

  5. Stir in the sugar and cook for 2 min or until melted.

  6. Stir in the orange and lemon rind and juice, and Grand Marnier. Heat gently for 1 min.

  7. Dip each crepe in the sauce to coat. Fold each into four to form a fan shape. Arrange the folded up crepes in the pan overlapping slightly and simmer for 1 min.

  8. Gently heat the cognac before carefully pouring over the crepes. Set alight with a lit taper. Shake gently and serve immediately.
