Apple pancakes

What you need

4 large red-skinned apples
freshly squeezed juice of 1 lemon
175 g self-raising flour, sifted
1 pinch salt
3 eggs, beaten
25 g caster sugar
475 ml milk
6 tsp butter

Method

  1. Peel, core and slice the apples into 9mm circles. Sprinkle with lemon juice to prevent discoloration.

  2. In a large bowl, mix together the flour and salt. Set aside.

  3. In a separate bowl, beat together the eggs and sugar until light in colour. Make a well in the centre of the flour. Pour in the egg mixture and half the milk. Slowly beat together until the mixture is smooth. Beat in the remaining milk, adding more milk if necessary to make a thick pouring batter.

  4. Heat a little of the butter in a large frying pan. Add an apple circle and top with spoonfuls of batter making sure the apple is completely covered. Continue to cook over a medium heat until firm. Flip the apple over and cook until golden brown. Remove and keep warm while continuing with the remaining apple circles and batter.

Serving suggestion

Serve 2-3 pancakes per person. Decorate with a liberal dredging of cocoa powder, maple syrup, sprigs of mint and apple slices. Serve with a dollop of ice cream.

Cook's tip

Use clarified butter as this cooks at a higher temperature without smoking.
