Chicken chasseur

This French casserole dish is very easy to prepare.

What you need

6 chicken portions
seasoning
50 g butter
25 g shallots, peeled and thinly sliced
125 g button mushrooms, wiped and sliced
45 ml dry white wine
300 ml good quality chicken stock
125 g tomatoes, de-seeded and diced
to garnish
3 tsp fresh tarragon, chopped

Method

  1. Preheat oven to 180°C.

  2. Season the chicken pieces all over. Heat the butter in a large pan. Add the chicken. Cook for 10 min or until golden brown all over, turning frequently. Transfer to a casserole dish, draining well.

  3. Cook uncovered in the oven for 1 hr.

  4. Add the shallots to the pan and fry for 2 min. Add the mushrooms. Cook for 2 min. Drain any excess fat from the pan. Pour in the wine and bring to the boil. Continue cooking until the mixture has reduced by half.

  5. Pour in the stock, diced tomato and simmer for 5 min. Season to taste. Pour the sauce over the chicken. Sprinkle with tarragon and serve.
