Pecan soda bread
What you need
- 225 g wholemeal flour
- 100 g plain flour, sifted
- 1 1/2 tsp bicarbonate of soda
- 1 1/2 tsp cream of tartar
- 1/2 tsp salt
- 40 g butter, at room temperature
- 50 g chopped pecans
- 3 tsp chopped fresh parsley
- 250 ml milk (approx weight only)
Method
Preheat oven to 220°C.
Stir together the flours, bicarbonate of soda, cream of tartar and salt in a mixing bowl. Rub in the butter. Mix in the pecans and parsley.
Make a well in the centre of the dry ingredients. Gradually stir in enough milk to give a soft dough.
Shape into a 18 cm round and mark into triangles. Place on a floured baking-sheet.
Bake in the oven at 220°C for 30-40 min or until firm and well browned.
Serving suggestion
Cook's tip
Sprinkle with the plain flour, oats and chopped pecans before baking.
