Pecan soda bread

What you need

225 g wholemeal flour
100 g plain flour, sifted
1 1/2 tsp bicarbonate of soda
1 1/2 tsp cream of tartar
1/2 tsp salt
40 g butter, at room temperature
50 g chopped pecans
3 tsp chopped fresh parsley
250 ml milk (approx weight only)

Method

  1. Preheat oven to 220°C.

  2. Stir together the flours, bicarbonate of soda, cream of tartar and salt in a mixing bowl. Rub in the butter. Mix in the pecans and parsley.

  3. Make a well in the centre of the dry ingredients. Gradually stir in enough milk to give a soft dough.

  4. Shape into a 18 cm round and mark into triangles. Place on a floured baking-sheet.

  5. Bake in the oven at 220°C for 30-40 min or until firm and well browned.
