Cheese truffles
Ideal for parties as nibbles as well as for buffets.
What you need
- 100 g grated stilton cheese (any other left over cheese will do)
- 100 g cream cheese
- 25 g snipped fresh chives
- freshly ground black pepper
- 150 g pumpernickel bread finely chopped in a mixer
Method
Mix together the cheeses and chives. Season to taste. Roll into 2 1/2 cm diameter balls.
Line a tray with greaseproof paper. Cover with the pumpernickel crumbs. Roll the cheese balls until covered in the crumbs.
Chill for at least 30 min.
