Sizzling shredded beef with peppers

This dish is easy and quick to make and the aroma is exquisite on cooking.

What you need

350 g beef fillet steaks shredded
2 yellow peppers, cored, de-seeded and chopped
2 green peppers,cored, de-seeded and chopped
45-60 ml groundnut oil
for the marinade
3 tsp light soy sauce
1 tsp dark soy sauce
1 tsp caster sugar
1 tsp cornflour
6 tsp dry sherry
1 egg white
seasoning
2 1/2 cm root ginger, peeled and chopped
3 small red chillies, de-seeded and finely shredded
2 cloves garlic, peeled and crushed
3 tsp dry sherry

Method

  1. Mix together the marinade ingredients. Add the shredded beef. Stir well. Marinate for 15 min. Drain well, reserving the marinade.

  2. Heat 60 ml of the oil in a frying pan or wok. Stir fry the beef for 1 min. Remove from pan and set aside.

  3. Adding 15 ml of oil to the pan, if necessary, stir fry the peppers and seasoning for 2 min. Remove from pan and set aside.

  4. Add another 30 ml of oil to the pan. Fry the ginger, chillies and garlic for 1 min. Return the beef and peppers to the pan with the reserved marinade and stir fry over a high heat for 2-3 min. Add the sherry or wine. Serve immediately.

Cook's tip

Remember when de-seeding the chillies, wash your hands thoroughly afterwards as they can cause a skin irritant and never allow "chillies" near your eyes.
