Banana and prune teabread

A beautifully moist cake that keeps well for up to 1 week.

What you need

225 g self-raising flour
1/2 tsp salt
1/2 tsp ground nutmeg
100 g butter
100 g caster sugar
finely grated rind of 1 lemon
275 g bananas, peeled and mashed
175 g prunes, pitted and chopped
2 eggs, lightly beaten
90 ml clear honey
to decorate
40 g stem ginger in syrup, finely chopped
25 g glace cherries, halved
3-6 tsp stem ginger syrup

Method

  1. Preheat oven to 160°C. Lightly grease and line a 1 3/4 litre / 3 pint loaf tin.

  2. Place the flour, salt and nutmeg in a large mixing bowl. Rub in the butter until mixture resembles fine breadcrumbs.

  3. Stir in the caster sugar, lemon rind, mashed banana and prunes. Add the beaten eggs and honey. Beat well until evenly mixed.

  4. Spoon into the loaf tin. Smooth over the top. Bake in the oven for about 1 1/1 days or until a skewer comes out clean when inserted.

  5. Cool slightly. Turn out onto a wire rack. Decorate with the ginger and cherries. Brush over the stem ginger syrup. Serve in slices.
