Gooseberry cooler
A refreshing drink made with gooseberries and sparkling mineral water.
What you need
- 225 g gooseberries
- 50 g caster sugar, to taste
- 450 ml sparkling mineral water, chilled
Method
Put the gooseberies in a pan with a little water. Cook for about 5 min until soft. Allow to cool.
Puree in a blender and then sieve.
Mix the puree and sugar in a jug until the sugar dissolves.
Top up with sparkling water.
