Gooseberry cooler

A refreshing drink made with gooseberries and sparkling mineral water.

What you need

225 g gooseberries
50 g caster sugar, to taste
450 ml sparkling mineral water, chilled

Method

  1. Put the gooseberies in a pan with a little water. Cook for about 5 min until soft. Allow to cool.

  2. Puree in a blender and then sieve.

  3. Mix the puree and sugar in a jug until the sugar dissolves.

  4. Top up with sparkling water.
