Tuna and sweetcorn lasagne

An easy and economical meal for the family.

What you need

75 g butter
75 g plain flour
900 ml milk
100 g cheddar cheese
3 tsp chopped fresh mixed herbs
seasoning
400 g canned tuna, drained and flaked
300 g canned sweetcorn, drained
75 g broccoli florets
225 g passata
6 sheets fresh lasagne
3 tsp naturally dried breadcrumbs

Method

  1. Preheat oven to 200°C.

  2. Melt the butter in a saucepan. Add the flour. Cook for 1 min. Slowly add the milk, stirring constantly, until all is incorporated. Bring to the boil then simmer for 2-3 min until thickened.

  3. Remove from heat. Stir in 3/4 of the grated cheese, chopped herbs and seasoning to taste.

  4. In a bowl, mix together the tuna, sweetcorn, broccoli and passata.

  5. In a rectangular ovenproof dish, spread half the tuna mixture over the base. Lay half the lasagne sheets on top. Spread over half the cheese sauce.

  6. Repeat the layers, finishing with a layer of cheese sauce on top. Sprinkle with the remaining cheese and breadcrumbs.

  7. Cook in oven for 40-50 min or until golden and cooked.
