Citrus raisin bakes

Orange and lemon peel add zest to these cakes.

What you need

100 g butter, softened
100 g soft light brown sugar
100 g raisins
grated rind of 1 orange
grated rind of 1 lemon
50 g mixed peel
150 g self-raising flour, sifted
juice of 1/2 orange
6 tsp shredless marmalade

Method

  1. Preheat oven to 180°C. Lightly grease a baking tray.

  2. Cream together the butter and sugar until light and fluffy. Add the raisins, orange and lemon rind and peel. Mix well.

  3. Work in the flour. Add a little orange juice if necessary to give a fairly firm, workable dough.

  4. Divide the dough into portions and roll into balls. Place well apart on the baking tray. Flatten with a palette knife. Brush tops with a little marmalade.

  5. Bake for 20 min or until golden. Transfer to a wire rack to cool.
