Blackberry vinegar
Mix with olive oil for a fruity salad dressing.
What you need
- 3 tsp cloves
- 3 tsp whole allspice
- 2 cinnamon sticks
- 450 ml white wine vinegar
- 150 ml balsamic vinegar
- 900 g granulated sugar
- 900 g blackberries, hulled and rinsed
Method
Tie the spice in a piece of muslin. Put in a large pan with the vinegars and sugar.
Dissolve over a low heat. Bring to the boil and simmer for 5 min.
Add the blackberries and simmer for 10 min.
Leave to cool completely. Strain into cold bottles. Seal and label.
