Chocolate and cinnamon egg nog
A glorious indulgence!
What you need
- 600 ml double cream
- 45 ml cocoa powder
- 75 g caster sugar
- 150 ml single cream
- 1 tsp ground cinnamon
- 6 tsp rum
- for the topping
- 1 egg, separated
- 10 g caster sugar
- 150 ml double cream, gently whipped
- to decorate
- 1 tsp cocoa powder
Method
Place the milk, cocoa, sugar, single cream, cinnamon, rum or brandy in a saucepan. Slowly bring to the boil, stirring constantly. Reduce heat and keep warm over a very gentle heat.
For the topping: Whisk the egg whites until stiff but not dry. Whisk in the sugar. Fold into the whipped cream.
Remove the chocolate mixture from the heat. Whisk in the egg yolk. Pour into warmed heatproof glasses. Top with a spoonful of the cream mixture. Decorate with a dusting of cocoa powder.
