Petit pots au chocolat

A perfect finish to a dinner party.

What you need

175 g plain chocolate
3 eggs, separated
3 tsp rum

Method

  1. Break the chocolate into a bowl placed over a pan of simmering water. Heat gently for 3-4 min until melted, stirring occasionally. Leave to cool slightly.

  2. Remove from the heat. Beat in the egg yolks and rum.

  3. Whisk the egg whites until stiff. Carefully fold into the chocolate mixture.

  4. Spoon into individual pots or ramekins. Chill for 2-1 days until set.
