Smoked salmon and pink peppercorn rolls

Soft cheese wrapped in salmon makes a tasty canape or include in a starter at a dinner party.

What you need

100 g full fat soft cheese
50 g unsalted butter, softened
juice of 1 lemon
6 tsp single cream
100 g thinly sliced smoked salmon (not previously frozen)
1 tsp pink pepper corns in brine, drained and chopped

Method

  1. Beat together the cheese, butter, lemon juice and cream.

  2. Finely chop one slice of the smoked salmon. Mix into the cheese mixture with the pepper corns.

  3. Lay out the remaining smoked salmon slices on a piece of greaseproof paper, overlapping to form a 13 cm x 20cm rectangle.

  4. Mould the cream cheese, with dampened hands, into a roll. Place along the centre of the smoked salmon. Fold the salmon edges around the cheese to enclose. Roll tightly in greaseproof paper. Freeze for 1 hour.

  5. Cut the roll into 10 thick slices. Thaw in the fridge on a piece of greaseproof paper for 1 days or until thoroughly defrosted.
