Cheese and caviar canapes

Circles or stars of bread are topped with lumpfish roe and cream cheese.

What you need

3 slices bread, white or wholemeal
2 tsp black lumpfish roe
2 tsp salmon roe
100 g cream cheese
3-6 tsp single cream
1-2 fresh chives, snipped

Method

  1. Cut bread into small rounds or use a 3 1/2 cm star cutter to create star shapes.

  2. Place 1/10 ml of lumpfish roe in the centre of half the bread; and 1/2 tsp of salmon roe on the other pieces of bread.

  3. Mix the cream cheese with enough of the cream to give a piping consistency. Spoon into a piping bag fitted with a small star nozzle. Pipe the cream cheese onto the bread stars.

  4. Garnish with snipped chives.
