Broccoli and stilton soup

A very easy soup to make.

What you need

3 tsp sunflower oil
1 large onion, peeled and chopped
350 g potatoes, peeled and chopped
900 ml light chicken stock
350 g broccoli, trimmed and chopped
225 g blue cheese, crumbled
seasoning

Method

  1. Heat the oil in a large saucepan. Add the onion and potatoes. Cover and cook gently for 10 min, shaking the pan occasionally.

  2. Pour in the stock. Add the broccoli. Bring to the boil, reduce heat, cover and simmer for 15 min. Leave to cool slightly.

  3. Liquidise until smooth.

  4. Return soup to pan and heat gently. Stir in the cheese. Season to taste.
