Beef in red wine

Beef and mushrooms in a rich and warming casserole.

What you need

15 g butter
3 tsp vegetable oil
225 g pickling onions, peeled
1 clove garlic, peeled and crushed
1 bay leaf
450 g lean beef braising steak, cubed
4 rashers rindless streaky bacon diced
25 g plain flour
450 ml red wine
225 g button mushrooms, wiped
seasoning

Method

  1. Preheat oven to 180°C.

  2. Melt the butter and oil in a large heatproof ovenproof casserole. Add the onions. Fry for 2-3 min or until well browned. Remove from pan with a slotted spoon. Set aside. Keep warm.

  3. Add the garlic, braising steak and bacon to the pan. Fry for 5 min, stirring frequently until well browned. Remove from the pan with a slotted spoon. Set aside with the onions.

  4. Add the flour to the pan. Cook, stirring, for 1 min. Gradually add the red wine, stirring frequently until all is incorporated. Bring to the boil.

  5. Return the onion and meats to the pan with the mushrooms, bay leaf and seasoning. Return to the boil.

  6. Place in oven and cook for 1 hour 30 min until beef is tender.
