Lancashire cheese sauce

A cheese sauce that can be served with grilled lamb, chicken or vegetables.

What you need

7 g butter
7 g plain flour
100 ml milk, warmed
1 egg yolk
75 g thick soured cream
50 g lancashire cheese, grated

Method

  1. Melt the butter in a small pan. Stir in the flour. Remove from the heat.

  2. Gradually add the milk to butter and flour mixture, stirring until thoroughly blended.

  3. Cook over a gentle heat, stirring continuously until the sauce thickens to a thin, creamy consistency.

  4. Remove from the heat. Blend in the egg yolk and cream.

  5. Stir in the cheese and cook gently until cheese has just melted.
