Lancashire cheese sauce
A cheese sauce that can be served with grilled lamb, chicken or vegetables.
What you need
- 7 g butter
- 7 g plain flour
- 100 ml milk, warmed
- 1 egg yolk
- 75 g thick soured cream
- 50 g lancashire cheese, grated
Method
Melt the butter in a small pan. Stir in the flour. Remove from the heat.
Gradually add the milk to butter and flour mixture, stirring until thoroughly blended.
Cook over a gentle heat, stirring continuously until the sauce thickens to a thin, creamy consistency.
Remove from the heat. Blend in the egg yolk and cream.
Stir in the cheese and cook gently until cheese has just melted.
Serving suggestion
Grilled lamb, chicken or vegetables.
