Cantuccini almond and orange biscuits

These Italian biscuits are eaten after dinner and dipped into small glasses of Vin Santo - a wine-like sherry.

What you need

2 eggs
150 g soft light brown sugar
200 g plain flour, sifted
50 g ground almonds
1/2 tsp bicarbonate of soda
grated rind of 1 orange
3-4 drops almond essence
100 g unblanched whole almonds, shelled, toasted and roughly chopped

Method

  1. Preheat oven to 200°C. Grease a baking sheet.

  2. Beat together the eggs and sugar until light and fluffy. Fold in the flour and ground almonds to make a soft paste. Fold in the remaining ingredients.

  3. Spoon the mixture onto the baking sheet in sausage shapes (5 cm x 30cm/2in x 12in).

  4. Bake for 10-12 min until golden.

  5. Cut each roll diagonally into 1 cm thick slices. Spread on a baking sheet. Return to the oven for 8-10 min until hard.

  6. Remove from oven. Leave to cool
