Chilled tomato cocktail

This is non-alcoholic using fresh tomatoes - of course you could add vodka if you wish.

What you need

1 1/2 kg ripe tomatoes, wiped and roughly chopped
1 large onion, peeled and roughly chopped
2 sticks celery, trimmed and roughly chopped
3 cloves
3-4 sprigs fresh parsley
2 tsp salt
1 tsp caster sugar
freshly sqeezed juice of 1 lemon
100 ml white wine
1/2 tsp worcestershire sauce
freshly ground black pepper, to taste

Method

  1. Place all ingredients in a large saucepan. Bring to the boil. Reduce heat and simmer for 30 min until softened, stirring occasionally.

  2. Transfer to a food processor blender. Process until smooth. Sieve the mixture and discard the vegetable leftovers.

  3. Chill before serving.
