Chilled tomato cocktail
This is non-alcoholic using fresh tomatoes - of course you could add vodka if you wish.
What you need
- 1 1/2 kg ripe tomatoes, wiped and roughly chopped
- 1 large onion, peeled and roughly chopped
- 2 sticks celery, trimmed and roughly chopped
- 3 cloves
- 3-4 sprigs fresh parsley
- 2 tsp salt
- 1 tsp caster sugar
- freshly sqeezed juice of 1 lemon
- 100 ml white wine
- 1/2 tsp worcestershire sauce
- freshly ground black pepper, to taste
Method
Place all ingredients in a large saucepan. Bring to the boil. Reduce heat and simmer for 30 min until softened, stirring occasionally.
Transfer to a food processor blender. Process until smooth. Sieve the mixture and discard the vegetable leftovers.
Chill before serving.
